I suppose then that on all Pokémon games you could do a one Pokémon challenge, complete the game without catching any Pokémon. Of course, many beginners only train one Pokémon up anyway.

What else? Metroid (the series) already has just about everything covered.

I've come up with one. An Anti-Magic challenge on Final Fantasy VI. Although I'm sure you could do it with any FF game. Just don't use magic throughout the entire game and stick with weapons. Use Items to cure you rather than magic. I might try it sometime.
